В производстве напитков также много общего, но назвать технологии идентичными нельзя.
Jim Beam – «чистокровный» бурбон Кентукки
Для его приготовления берут смесь кукурузы (не менее 51 %), ржи и ячменный солод. Злаки разбавляют водой и варят из них затор, в который после охлаждения до 30–38 °С добавляют дрожжи.
Кукуруза – главный ингредиент американских сортов виски
После ферментации сусло подвергают двойной дистилляции, в результате которой получают жидкость с концентрацией алкоголя не более 80 %.
Дистиллят разливают в новые обожженные изнутри бочки из белого американского дуба. В обожженных бочках сахар карамелизуется и придает напитку более насыщенный и менее танинный вкус. При требовании выдерживать бурбон в бочках не менее 2 лет «Джим Бим» выдерживают 4 года.
Один из секретов качества напитка – вода. В Кентукки она проходит через пласты натурального известняка, который действует как фильтр, очищая ее от примесей железа и обогащая ионами кальция. Это придает алкогольному напитку мягкий вкус.
Jack Daniel’s – виски Теннесси
Технология изготовления напитка начинается с составления смеси, в которую входит 80 % кукурузы, 12 % ячменного солода и 8 % ржи. Из злаков, воды и дрожжей готовят затор, который бродит 6 дней.
Для получения дистиллята используют однократную перегонку в медном кубе. Исходная крепость спирта – не ниже 75 %.
На следующем этапе дистиллят фильтруют, прогоняя его через 3,5-метровый фильтр из древесного угля, полученного путем сжигания сахарного клена. В этот момент жидкость очищается от сивушных масел и вкуса кукурузы. Напиток приобретает сладость, «превращающую его в виски из Теннесси, а не бурбон», который не фильтруют.

Очищенный дистиллят выдерживают в новых обугленных дубовых бочках, которые компания делает собственноручно. Минимальный срок созревания – 2 года.
Можно ли считать Jack Daniel’s бурбоном?
Скорее нет, чем да. Ведь не будем же мы считать анисовую водку самбукой, только потому, что у них похожие ингредиенты? Но любителям бурбона вкус виски Теннесси будет близок.
Что говорят любители?
Мнения любителей по поводу «Джека» и «Джима», как всегда, разошлись.

Уже прошло почти 3 года, как я первый и последний раз покупал и пытался проникнуться вкусом этих легендарных американских виски. И больше не возвращался, ибо решил не зацикливатьсяна на них и пробовать другие бурбоны, поскольку не очень интересными показались они мне тогда. И вот, спустя продолжительное время появилась возможность сравнить их лоб в лоб и посмотреть – изменилось ли мое мнение о них и так ли они ужасны на вкус, что годятся только в качестве «бухла для коктейлей», как любят писать на просторах интернета стран СНГ…
[Итак, приступим…]
Аромат:
Jack: карамель, банановые конфеты; фруктовая жевачка; чувствуется общая округлость, мягкость
Jim: карамель; кукуруза; ноты лака явно прослеживаются; легкая спиртуозность; едва уловимые ноты мела
Вкус:
Jack: лак, карамельки, орехи (ближайшая ассоциация с арахисом); зеленые горькие яблоки
Jim: карамель и мармелад; лак; листья; проявлятся вновь легкая спиртуознось, резкость
Послевкусие:
Jack: сухое, простое; немного специй, снова проявляются орехи, легкая спиртуозность и ноты лака
Jim: короткое, сухое; ноты кукурузы и дуба; зеленая трава
По большому счету оба этих образца при адекватных ценах (JD no7 брал весной 2015 за 950 (0.7), а Jim Beam зимой 2015 за 850 р.) вполне имеют право для существования в домашнем баре. И пить их можно не только в коктейлях или с колой, но и чистыми. Много раз видел, что жалуются, что JD сильно «лакированный» и отдает краской. В очередной раз убедился, что за счет угольной фильтрации он как раз наоборот становится мягче, а на смену лаковым нотам приходят бананово-карамельные оттенки в аромате, и ореховость во вкусе. А вот Jim Beam, на мой вкус, как раз больше отдает лаком и красками, но зато он более цельный, яркий, по-бурбоновому немного приторно-резкий, каким и должен быть напиток из Кентуки по классике.
Так что не так страшен черт, как его малюют. Даже после бурбонов уровнем выше (Woodford Reserve, Maker’s Mark, 1792 R.Reserve) я не вижу причин ругать эту классику начального уровня. Видимо, многие из негативно настроенных не попробовали в полной мере молты и бурбоны, а просто пока ищут «свой виски» и формируют вкус.
В целом оба этих напитка являются хорошей отправной точкой для знакомства с миром бурбонов.

Два самых популярных напитка. Все про них знают.
Встречаются во всех магазах. Тут сложно сказать, какой напиток поспорее. Возможно, даже Джек, любая девчонка с ним фотографируется на какой-нибудь вечеринке в свой Инстаграм.
Именно из-за его попсовости, я его всячески обходил стороной… Только на пятой бутылке, наверное, я его решил попробовать. Оказалось, что хоть и попсовый, но достаточно качественный и вкусный.
Напиток очень добротный.
Перед сравнением давайте поговорим о самом главном. Джек это виски или Бурбон?
Мне хватило попробовать его один раз, и мне этого хватило, чтобы понять, что это Бурбон. Только благодаря одному нюансу его нельзя назвать чистым бубоном, а тенессийским виски — в финале после перегонки его дополнительно фильтруют через уголь сахарного клена.
Финальный напиток получается чуть более мягким.
Выдержка у них одна и та же.

У джима я выделил кукурузный вкус, преобладает сладость кукурузной муки. Запах мощный, не скажу, что едкий, но сразу бросается в нос, что ощущаешь плотность кукурузы.
В Джеке более размеренный вкус.
Я все же склоняюсь к ]]джиму — все-таки настоящий Бурбон.
Джек как бы повкуснее, но совсем немного.
Цена у него выше намного.

In this ultimate bourbon showdown, I’ll compare these two world-famous bourbon brands: flagship white label Jim Beam vs Jack Daniels Old No.7. Both brands have a rich history and a loyal following, but which one will come out on top in this comparison?

For a unique twist on classic Southern flavours, try pairing Jim Beam with fried green tomatoes or okra. Jim Beam is also perfect for classic southern sides like collard greens and macaroni and cheese. To add sweetness to the bourbon’s flavour profile, try using it in braised root vegetables such as sweet potatoes or carrots.

Final thoughts
Jim Beam is a great bourbon for those who appreciate spiced flavours in their whiskey. Less sweet than the Old No.7, it’s distilled twice at reduced temperatures which retains the natural flavours of the mashbill. For me, Jim Beam has an lovely oak-aged flavour that gives it a mellow aroma and with typical bourbon hints of vanilla and caramel. For those on a budget, Jim Beam is that bit more affordable than Jack Daniels.
On the other hand, Jack Daniels is a great whiskey for those who prefer a sweeter spirit. Its tremendously mellow, smooth flavour comes from its charcoal mellowed process which makes it super easy to drink, even when neat. Notably less spicy than the Jim Beam white label, the Old No.7 is a treat for anyone with a sweet tooth and wants a silky drinking experience.
Either way, these are two of the most popular and well-known American whiskey brands. Despite being entry-level bottles, both are known for their high quality and mellow drinking experience.
In general, either Jim Beam and Jack Daniel’s are an excellent choice for whiskey lovers and make for a staple bottle on your spirit shelf. Both are affordably priced and can be found in most liquor stores.
Author’s recommendation
Recently, I’ve become incredibly fond of spiced foods and Indian tea. Jim Beam has a pleasing rye pepperiness which I simply love. Out of the two, I would’ve previously gone with the Old No.7 (a favourite during my younger years!) however, my recommendation between these two whiskeys is the White Label from Kentucky. It’s smooth, easy to drink and has a nice background balance of spice and vanilla. A charming little whiskey for an evening aperitif.
History of Jim Beam Bourbon
Tracing its roots back to 1795, Jim Beam is the world’s premier bourbon. Founded by Kentucky farmer Jacob Beam and his family-owned recipe, this distillery continued to be operated for decades until it was purchased in 1933 by Harry W. Beam–a descendant of Jacob himself. Drawing from a legacy of tradition and excellence, Jim Beam stands as the preeminent source for premium whiskey worldwide.
After the repeal of Prohibition in 1933, Jim Beam experienced a surge in popularity. In ensuing years, they expanded their portfolio to include an expansive selection of bourbons and whiskeys. Fast forward to present day; Jim Beam is now one of the world’s largest bourbon brands – as well as being one most sought-after products amongst discerning whiskey connoisseurs.
Compared to other bourbons, Jim Beam stands out with its lengthy maturity process. The bourbon whiskey is aged for at least four years, considering that by law all bourbons must be aged for a minimum of two years. That’s what gives Jim Beam its unique smoothness and taste – making it an ideal option if you’re on a budget, new to whiskey or still exploring the bourbon market.
In addition to its flagship bourbon, Jim Beam also offers a range of flavoured and small-batch options, such as the Jim Beam Devil’s Cut, which is made from the liquid that is absorbed into the barrel’s wood during the aging process, giving it a rich and intense flavour.

History of Jack Daniels Whiskey
Jack Daniel’s is a brand of Tennessee whiskey established in 1866 by Jasper Newton “Jack” Daniel. The Jack Daniel’s Distillery is located in Lynchburg, Tennessee, and is the oldest registered distillery in the United States.
Like all Tennessee whiskeys, Jack Daniel’s is required to use the famous charcoal mellowing process, which gives it a distinctly smooth and sweet flavour profile. Also known as the Lincoln County Process, this method requires the new-make whiskey to be filtered downwards through 10 feet of maple sugar charcoal before ageing in charred oak barrels. This slow filtration method is said to remove impurities and smooth out the whiskey’s flavour.
If that wasn’t unique enough, you may have also noticed the term sour mash across the label. Like many American whiskeys and bourbons, this method refers to the traditional technique of using old grains mixed with new ones during the fermentation stage.
By using old ‘spent grains’, the Lynchburg distillers purposefully ‘sour’ their new mash mixture to encourage fermentation activity within the beer. By lowering the PH with a portion of old grains, this deters any unwanted bacteria from growing which would otherwise jeopardise the final beer and subsequent whiskey. Jack Daniel’s whiskey has become one of the best-selling American whiskeys in the world, and it’s known for its smooth and mellow taste. This brand has a rich history and has remained family-owned and operated for over 150 years.
The label’s unique charcoal mellowing process and aging process and its reputation for quality have made it a household name and a favourite among whiskey enthusiasts worldwide.
Quick fact: Ratpack super star Frank Sinatra was a such fan of the Lynchburg whiskey, that when he passed away, he was buried with a bottle of Jack Daniels in his coffin.

This week, my side-by-side comparison is two high-volume brands against each other; Jim Beam bourbon vs Jack Daniel’s Tennessee whiskey. Both are from large commercial distilleries, and between these two brands, they command quite a bit of bottle space. They are in a similar price category and are both known globally.
However, Jim Beam and Jack Daniel’s are distinctly different in several ways. Jim Beam is a straight bourbon whiskey made in Kentucky, while Jack Daniel’s is a whiskey distilled in Tennessee.
But what happens when you put them side by side in a taste test?
Jim Beam Bourbon Whiskey
Jim Beam Kentucky Straight whiskey is one of the best selling brands of bourbon in the world. In 1795 a group of German farming immigrants founded Jim Beam. Jacob Beam noticed how fertile the Kentucky region was for cereal farming, and he grew corn and grains, which he eventually used in his whiskey.
He began selling it under the name of Old Jake Beam, and in 1820 his son David began managing the distillery at just 18 years old. The distillery and brand grew from strength to strength. In 2014, Suntory Holdings bought Jim Beam to create Beam Suntory.
The Beam Suntory bourbon portfolio includes Makers Mark and Knob Creek. The whisky portfolio includes Yamazaki, Laphroaig and Bowmore and a few more.
The Jim Beam White Label bourbon is distilled at lower temperatures and aged for 4 years in newly charred American oak. The mash bill is 75% corn, 13% rye, and 12% barley. Jack Daniel’s Old No 7 Tennessee whiskey
Love it or hate it, you will find Jack Daniel’s all around the world! Jasper Newton ‘Jack’ Daniel’s started the Jack Daniel’s distillery around 1875 in Moore County, Tennessee. Jack Daniel developed the Lincoln County process.
This is where the whiskey is filtrated through sugar maple charcoal before maturation. This process is of crucial importance to the finished whiskey’s character. Whiskey from the Jack Daniel’s distillery is bottled as Tennessee whiskey.
The distillery remained in Jack’s family until 1956. It was sold to Brown Forman, a Kentucky distilling company. The Jack Daniels’ brand of Tennessee whiskey has become the highest-selling American whiskey in the world.
The Jack Daniel’s Old No 7 whiskey has a mashbill of 80% corn, 8% rye, and 12% barley. After the charcoal filtration, the new spirit is aged for at least 4 years in new charred American oak.

The Jim Beam Kentucky bourbon whiskey has notes of pine forest, toasted oak, vanilla, and lemon pepper. It is quite spicy with not many sweet notes. It is also a bit cheaper than Jack Daniel’s whiskey. The Jim Beam makes for quite a light drinking experience, and I found it a bit bland.
The Jack Daniel’s Old No 7 whiskey has more butterscotch sweetness, vanilla notes, marzipan, and toasted oak. Again, it is not the most complex dram but more memorable than the Jim Beam. The Jack Daniel’s also has an oily note that helps to capture the sweetness.
I have a sweet palate, so Jack wins hands down. John enjoyed the more spicy notes of the Jim Beam bourbon, but in the end, the mellow note of the Jack won him over.
So in my book, the Jack Daniel’s whiskey easily takes the crown for the best between these two.
